Pumpkin Pie Granola

sunflower or pumpkin seeds
Preheat oven to 350°F. In a large bowl, add rolled oats, instant oats, and seeds. Mix until evenly combined.
In a small pot over medium heat, stir together pumpkin puree, brown sugar, butter, and pumpkin pie spice. Once mixed together, remove from heat and pour over oats mixture.
Mix the oats with a large spoon until they are evenly coated with the pumpkin puree mixture.
Line a baking sheet with parchment paper and place an even layer of granola on the pan. The granola should be packed together, not spaced a part.
Bake for 15-20 minutes, until fragrant and browned. Remove from heat and let cool completely.
Once cooled, break granola with hands into desired chunks and place in an airtight container.
