Pumpkin Pie Granola

  • ½ cup pumpkin puree
  • ¼ cup brown sugar
  • ¼ cup unsalted butter
  • 1 tsp pumpkin pie spice
  • 1 ½ cup rolled oats
  • 1 ½ cup instant oats
  • ¼ cup sunflower or pumpkin seeds


  • Preheat oven to 350°F. In a large bowl, add rolled oats, instant oats, and seeds. Mix until evenly combined.
  • In a small pot over medium heat, stir together pumpkin puree, brown sugar, butter, and pumpkin pie spice. Once mixed together, remove from heat and pour over oats mixture.
  • Mix the oats with a large spoon until they are evenly coated with the pumpkin puree mixture.
  • Line a baking sheet with parchment paper and place an even layer of granola on the pan. The granola should be packed together, not spaced a part.
  • Bake for 15-20 minutes, until fragrant and browned. Remove from heat and let cool completely.
  • Once cooled, break granola with hands into desired chunks and place in an airtight container.
