Mango Salad

  • 1/4 cup parsley finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoons black pepper


  • 1 orange pepper sliced into strips
  • 1 mango sliced into strips
  • 2 cups kale chopped
  • 1 cup cabbage chopped


  • In a small bowl, whisk together olive oil, apple cider vinegar, and black pepper, set aside.
  • In a large bowl, mix together chopped kale and cabbage. Add dressing and massage with hands until thoroughly mixed
  • Add sliced peppers, mango and parsley and mix well.
