Carrot Cake Energy Bites
Makes 20 energy bites
pumpkin pie spice
(or 1/2 tsp cinnamon + 1/8 tsp ginger powder + 1/8 tsp ground nutmeg)
unsweetened shredded coconut
used to cover energy bites
In a food processor, add all the ingredients except for the shredded coconut. Blend until ingredients are well blended together and a ball forms.
Using damp hands, create 1-inch balls and immediately roll in shredded coconut. (Note: if mixture is difficult to work with, refrigerate for 15-20 minutes).
Refrigerate energy bites for at least 1 hour before serving. Store in refrigerator for up to a week in an airtight container.
