Coconut Date Balls

Makes 25 1-inch balls

Ingredients
 
 

  • 2 cups dates pitted
  • 1/2 cup quick oats
  • 1/2 cup almonds
  • 1/2 cup shredded coconut unsweetened (for rolling)

Instructions
 

  • In a food processor, chop dates until coarsely chopped.
  • Add oats and almonds and pulse to chop until mixture comes together and can no longer see separate date pieces.
  • Using damp hands, roll mixture into 1-inch balls and roll in shredded coconut.
