Gourmet Stuffed Dates

Post-Iftar Snacks | Ramadan | Recipes

Ramadan is right around the corner and I wanted to share an extra special recipe that I have been dreaming up for a few months now! While dates are delicious on their own (especially after a long day of fasting), I created this recipe for Gourmet Stuffed Dates for those extra special days. This also makes a great gift for neighbours or a starter when you are hosting iftar parties.

These Gourmet Stuffed Dates are made with simple ingredients but when they come together, boy are they a party in your mouth! I highly recommend sticking to the mascarpone cheese and not swapping it for cream cheese. If you have never tried it, mascarpone cheese is an Italian cream cheese that isn’t as tart and has a luxurious mouthfeel. I didn’t even need to use the whole container for 30 dates so a little goes a long way!

Gourmet Stuffed Dates

Makes 30 dates
Servings 15 servings

Ingredients
 
 

  • ½ cup 35% whipping cream
  • ½ cup mascarpone cheese
  • 2 tsp maple syrup
  • 30 Medjool dates pitted
  • ¼ cup crushed pistachios
  • ¼ cup melted chocolate

Instructions
 

  • In a medium sized bowl, use a hand blender to mix whipping cream until soft peaks form.
  • Add in the mascarpone cheese and maple syrup. Mix with hand blender until smooth and stiff peaks form.
  • Fill cream mixture into a piping bag fitted with the 1M piping tip. Alternatively, you can use a sandwich bag and cut the corner.
  • Pipe cream mixture into the centre of each date. Top with crushed pistachios or drizzle with melted chocolate.
