The Secret to Loving Your Salad? This Creamy Avocado Dressing!

You may have seen my last post about how to make a salad you will ACTUALLY enjoy. Well today, I am going to show you how to make a delicious salad dressing that will take your boring ol’ salad to the next level. Follow these steps to make an amazing salad + make this salad dressing = you will be eating veggies everyday.

If you love creamy dressings, then you HAVE to try this recipe. Creamy dressings that you find in the grocery store are loaded with fat, sugar, and extra ingredients to make it taste good and so that it lasts for a long time in your fridge. This creamy avocado dressing still gives you that velvety texture, with simple ingredients you probably have at home!

When I was testing out this recipe, my biggest concern (after taste), was how long it will last in the fridge. As much as I want everyone to eat healthier, I know that you may not be willing to whip out your blender to make your own dressing every single day. Well, I have good news! This avocado dressing lasts up to ONE WEEK in the refrigerator! The lemon juice in the dressing prevents the avocado from browning, keeping a nice green colour. Just make sure you store it in an airtight container, like a mason jar.

Not only does this Creamy Avocado Dressing taste good, but it is also good for you! Adding a salad dressing with healthy fats can also help up the absorption of fat-soluble vitamins found in a variety of vegetables.

Creamy Avocado Dressing

Ingredients
 
 

  • 2 avocados
  • 1/2 of a lemon juiced
  • 1 garlic clove
  • 1/4 cup cilantro or parsley
  • 1/4 cup of water
  • salt and black pepper to taste

Instructions
 

  • In a blender, add avocados, lemon juice, garlic clove, and cilantro. Add water. Blend until smooth. Add 1 tablespoon of water at a time if you want the dressing to be a little thinner. Be careful not to add too much water at once. You still want the dressing to be thick and creamy. Add a pinch of salt and black pepper. Taste to adjust seasoning and blend until mixed. Pour into a jar and store for up to one week.
