How I meal prep for the week!

I’m doing a full Sunday meal prep after a very long time, so it did take me a bit longer than I’m used to…but I’m SO glad I got this done! We started off this week going from 2 to 3 sick kids, so it’s helpful to have healthy meals on hand. As much as I want to stress eat, I won’t because I have a fridge full of food!

Here’s what I made:
Steak stir fry
Peri peri salmon
Paneer pepper curry (I guess you could call it a jalfrezi)
Pickled mangos
Beet slaw
Tomato salad
Yellow rice

And yes, I will share the recipes of most of these dishes iA!

It’s been a minute…and I gotta be honest…the mental load of motherhood and adjusting to 3 kids has been a challenge for me in the past little while. I’ll have great weeks where I feel balanced and then weeks where I just feel like I’m everything to everyone else and forgetting myself in the process. Today was a particularly challenging day because 2/3 kids were sick…so I messaged Belal and let him know I was going to go for a bike ride. That’s step 1 - letting your support people know what you need, when you need it. I sent that message because I needed that added accountability and wouldn’t have done it otherwise. The thing is, I haven’t gone on a solo bike ride in over 2 years! So by the time he came home I was ready to make an excuse on why the kids needed me and why I couldn’t leave. But since I sent that message, Belal knew I needed to leave so with his encouragement, I headed out. It may seem like something small, but that 30 minute solo bike ride of being able to HEAR MY OWN THOUGHTS was so needed. It gave me the clarity I needed and reminded me that although it will take time for my to find myself again, I will get there inshaAllah ❤️.

So that’s where I’m at, I’m hoping to be back into the swing of things soon iA, just wanted to give you all an update!

There is so much fear around traveling with kids - and after finally doing it earlier this month, I can say that it was honestly such an amazing experience alhumdulilah! Yes we had to slow things down a bit to meet our kids’ needs, but to have these new experiences with our kids by our sides was so special.

I find there is so much emphasis on social media when it comes to the challenging side of children. It’s not always easy, but it can definitely be beautiful ❤️.

Our first stop in Banff had to be Lake Louise! As I looked far off into the distance looking for the blue water, Belal says, it’s right in front of us…FROZEN! We were so surprised to find a massive lake frozen in May. We decided to ditch the originally planned hike around the lake and walk directly onto it! Sure, we didn’t get our blue water pic, but how many people can say they walked *on* Lake Louise!

Can butter and sugar be a part of balanced healthy diet for kids? Yes! In fact, I think it’s pretty important to teach kids how to find a balance of healthy foods but also treats. We don’t use the words “junk food” nor do we make anyone feel bad about their food choices. If I can raise good eaters that don’t feel guilty about eating treats every Now and then, I’ll be very happy inshaAllah!

Officially 8 months postpartum today and I’m making a commitment to myself.

I’m committing to finding the strongest version of myself.
I’m committing to being the happiest version of myself.
I’m committing to being the most comfortable version of myself.
I’m committing to finding the new me so that I can be the best me for my children.

And this is not to say that I don’t have weight loss goals, they just aren’t the main motivation. When you find a deeper “why”, you’re more likely to stick to it. It isn’t about the number on the scale, but about how I feel.

I contemplated on posting this because where I’m at right now isn’t my ideal self but I do want to share this journey with you all as I find my new self. Getting out of the house today for my first run felt so overwhelming…I didn’t even know what to wear so put on my husband’s tshirt 🤷🏻‍♀️.

So now that I’ve shared my commitment to myself, what is your commitment to yourself?

Introducing this year’s Eid Cheesecake: Croquembouche Cheesecake!

Croquembouche is originally a French dessert and quite a work of art on its own! For my version, I started off with a classic cheesecake base topped with choux pastry puffs filled with Nutella cream dipped in caramel and wrapped in spun sugar.

This was probably the most nerve-wracking cheesecake I’ve made because it requires assembly before serving!

I think it’s safe to say, this is a cheesecake original as I have not found anything like this on the internet yet!

Today is such a special day for me. With the pandemic + pregnancy and then postpartum, going to the masjid felt so challenging. My girls made dua almost everyday when they drove by our local masjid - “Oh Allah open up the masjid for kids”. Today, their duas were answered! Belal went to the first Jummah, came home and watched 👶🏽 while the ladies of the house went to the second Jummah.

The girls even took their little purse loaded with their money that they have been waiting to donate!

Did you know, over the last 4 years the proportion of employed adults accessing a food bank has grown by 44%? But what happens when those food items are generally not the healthiest nor do they include fresh or halal items? This is why @nzfcanada is a great option to donate your zakat money too - they distribute fresh grocery boxes to families in need across Canada. It also includes halal meat!

Food insecurity is on the rise and it is happening in our own community.
Over 5000 individuals received food packages
More than 1560 families received assistance through food packages in 2021.

CHOCOLATE OAT BARS [SAVE TO MAKE]

This is a must try recipe! Anyone who tries it says it tastes like a chocolate bar 🍫. Here’s how to make it:

1/2 cup coconut oil
1/2 cup maple syrup
1 cup almond butter

Heat this mixture over a saucepan

In a large mixing bowl mix together:
2 cups oats
1/2 cup pumpkin seeds
1/4 cup chopped hazelnuts
1 cup dark chocolate chips
2 Tbsp shredded coconut
1/4 cup ground flaxseed

Pour liquid mixture and mix.

Spread in a square pan lined with parchment.

Refrigerate for 3-4 hours or until firm.

Cut into small squares and enjoy! Keep refrigerated to keep the firm texture.
